Sentosa is not just home to a wealth of thrilling tourist attractions — with the newest addition of the floral-themed 1-Flowerhill restaurant at Imbiah Road, it’s also blooming into yet another up-and-coming F&B enclave in Singapore.

1-Flowerhill, which launched officially on May 2, is a multi-concept establishment by lifestyle and F&B empire 1-Group

Just as you might expect, it’s set in a majestic, century-old colonial bungalow surrounded by lush greenery. (Other restaurants by 1-Group include Au Balcon, Botanico and Una, which are set in similar scenic settings.)

It’s a breathtaking, picturesque spot designed after one of French impressionist painter Claude Monet’s pieces, the idyllic Île aux Fleurs near Vétheuil.

Perched on a hill next to Sentosa’s Mount Imbiah, the restaurant recreates the romantic, utopian paradise depicted in his painting, with beautiful florals and cascading greens.

And as you wander along the winding garden paths, take in the panoramic view of the skyline, heritage trails and newly opened Sentosa Sensoryscape down below. 1-Flowerhill is truly a sight to behold.

It also houses three dining concepts under one roof. Besides 1-Group’s signature Wildseed Cafe, there’s also its newly launched Wildseed Bar & Grill and luxurious new French-Japanese restaurant Camille

If you’re a seasoned cafe hopper, then Wildseed Cafe will be a familiar name. This is its third outpost, besides those at Alkaff Mansion and The Summerhouse. With how gorgeous this new spot is, it’s perfect for bringing our dates to.

Located on the first floor of the bungalow, the cafe is an outdoor botanical sanctuary nestled in a field of blossoms and greens. Enjoy the cool midday breeze and scenery while you tuck into tantalising, local-inspired brunch mains. The cafe is also pet-friendly, so bring your furry friend to bask in the tranquillity with you.  

Come evening, Wildseed Cafe transforms into Wildseed Bar & Grill. All-day menus and brunch dishes are swapped for grilled meats, sharing plates and hand-crafted cocktails, where you can unwind over a drink or two.

A luxurious Japanese-French restaurant

Camille is a Japanese-French restaurant that’s tucked away on the second floor of 1-Flowerhill. With its cosy plush seats, warm lights set to low and exquisite flower arrangements, the space exudes an aura of romance and luxury. 

The restaurant is an ode to Monet’s greatest love and muse — his wife, Camille. It’s a love story for the ages — she features in 50 of his art pieces and is almost always drawn among flowers. 1-Flowerhill’s “Flower Island” decor is greatly influenced by these pieces.

When it comes to its choice of fare, Monet’s fascination with Japanese culture is why the restaurant Camille specialises in fusion cuisine. The dishes are woven with French techniques and Japanese flavours, such that the season’s finest ingredients take centre stage.

Where French cuisine meets Japanese flavours

One of the headliners is the magret de Conrad (S$46), which sees juicy slices of Rougie duck breast specially sourced from France. 

The protein is accompanied by colourful chunks of marinated plum and heirloom beetroot, as well as an ume shiso jus. The gravy is rich in flavour, with dried shiso leaves and sweet dried plums to elevate the savouriness of the beef jus. 

It’s also paired with a side of beetroot and umeboshi coulis. The beetroots are boiled till soft, then blended into a puree and combined with umeboshi (pickled plum) to create a unique sweet-sour combination.

We predict that the Robbins Island full-blood wagyu flat iron MBS 7 steak (S$62) will be another hot commodity at every table. 

The beef is perfectly seasoned with salt and pepper and can be grilled to a doneness of your choice. 

The tender steak is also served with a salt-baked celeriac that’s oven-baked for two hours. The latter is glazed with brown butter and tossed with balsamic teriyaki sauce for a subtle, sweet and toasty flavour that goes well with the umami-rich beef

The dish is also served with a confit banana shallot that has been slow-cooked in olive oil and thyme for a heady fragrance — it’s a classic, wonderfully executed dish that we’ll order again when we next visit.

Seafood lovers should order the Marseille seafood stewed papillote-style (S$45). It’s an elevated seafood dish that sees a variety of crustaceans — think: Mussels, scallops, prawns and more — and Japanese sea bream sitting in a creamy lobster bisque. 

The seafood was fresh and delicious, but the winner for us was the lobster bisque that’s scented with yuzu. It’s prepared with a lobster head and sauteed until almost cooked, then mixed with ingredients such as lobster coral, tomato paste and carrots for extra flavour. 

The stock is also braised with brandy for a mild sweetness and seasoned with miso paste and tart yuzu juice for that pinch of zestiness. The result is a rich, fragrant stew that’s light on the palate, yet vibrant in flavour.

There’s no prettier dessert than the deconstructed “black forest” (S$28). It’s a sweet, beautiful mess that leaves an unforgettable impression, with edible chocolate soil, flowers and cherry granola sprinkled artfully all over the plate. 

It’s a creative, eye-catching rendition of the classic black forest dessert, in which a decadent Valrhona 70% Guanaja chocolate mousse takes the limelight. It’s also adorned with a handful of sweet treats, such as red cherry sorbet, mushroom meringue and frozen chocolate clouds. 

The dessert is meticulously assembled table-side, where diners can enjoy the show while the chef expertly assembles all the sweet pieces together.
