Love your pies thin & ultra-crisp? Check out Twofold Pizza at Serene Centre, launched by Micro Bakery Kitchen

Dough has always been my weakness — give me anything freshly baked and I’m halfway sold. 

But what really keeps me coming back, whether to a bakery or a restaurant, is when a spot does great at experimenting with unique flavour combos, yet still nails the classics.  

That’s precisely where Micro Bakery Kitchen and its sister venture — Twofold Pizza — come into their own.

A well-loved name in Singapore’s cafe-bakery scene, Micro Bakery Kitchen has garnered a devoted following for its homely, artisanal bakes that are all made from scratch. 

It all began in 2019 with its cosy, hole-in-the-wall space at Serene Centre in Bukit Timah. Since then, the brand has grown, with a second branch at the historic Red House — once home to the former Katong Confectionery & Bakery — and a third outlet in Tiong Bahru

The bakery has since shifted two doors down from its OG spot, expanding into a larger, more comfortable space.

Meanwhile, its original unit has been given a new lease of life as Twofold Pizza, firing out thin-crusted pies since October last year.

Everything at Twofold Pizza is made in-house daily — right down to its dough, which undergoes a 24-hour overnight fermentation process.

Here, you can have your pies to-go or enjoy them on the spot. There’s a row of high chairs facing the main road for people-watching, or you can head down to the communal patio — owned by the building — for a breezy hangout. 

Crunchy-licious pizza to die for

On its menu, you’ll find a tight line-up of four permanent pizza variations, alongside a rotating monthly special — all available by the slice, or as whole pies.

If you’re anticipating the soft, fluffy style typically associated with Neapolitan pizzas, you’d want to throw that expectation out of the window.

Twofold’s pies are much more crispier, built on a thin base that delivers a satisfying crunch, while still holding onto that signature bite and a lightly airy crust. 

I’m usually more attuned to the Italian approach you usually find around Singapore, but this iteration just hits the spot. The extra crunch adds a layer of texture I didn’t quite know I needed, until now.

For those who gravitate towards familiar flavours, the salami (S$8 per slice) is a reliable pick, topped with spicy pork salami and a vodka sauce base. 

As someone who is poor at taking spice, I found the heat relatively approachable, thankfully. It’s more of a gentle warmth than anything too punchy. 

In place of the usual marinara base, the vodka sauce brings a richer, slightly tangy depth that rounds out the flavours and gives the pizza a little more character than your standard slice.

If you’re not quite feeling the salami, go straight for the Italian sausage (S$9 per slice). It brings together juicy fennel pork sausage, with marinara sauce, broccolini, kale, mozzarella, and pecorino romano cheese. 

There’s nothing particularly unfamiliar about this combo, but the inclusion of kale was a pleasant touch. It’s not something you often see on a pizza, and here, it adds an airy crisp, plus a slightly earthy undertone that pairs well with the other components. 

Between this and the salami, I’d personally go for the sausage. There’s a rustic quality to it that feels especially comforting, though both are solid in their own way.

My favourite has to be Twofold’s mushroom (S$8 per slice) pizza, layered with mixed mushrooms, ricotta, scamorza, mozzarella, and finished with hot honey.

On paper, this combo sounds fairly straightforward — simply different mushroom varieties coming together on one pie — but it somehow went beyond my expectations. 

Just as I thought, the earthiness of the fungi pairs well with the creaminess and richness of the cheeses. But the real cherry on top is the hot honey, which adds a gentle sweetness that sharpens the contrast and ties everything together effortlessly. 

It’s a tried-and-tested flavour that can easily be overlooked next to bolder, meatier options, but that’s what makes it even more memorable, too.

During our visit, we also tried the Green Goddess (S$8 per slice) — a monthly special creation, featuring broccolini, asparagus, kale, pistachio, scamorza, and ricotta cheese.

It’s quite uncommon to see a pizza built around vegetables in this bold manner. Asparagus and pistachio on it? That certainly isn’t your everyday combination, and naturally, it was enough to make us do a double take.

Surprisingly, it doesn’t taste aggressively herbaceous or vegetal. The ricotta and scamorza brings creaminess, while the pistachio’s nuttiness makes the sharper green notes come across less jarring.

Twofold Pizza’s housemade slushies is a must-have

Beyond the pizzas, the lemonade slushie (S$7) here might just be the unsung hero of the meal — especially in Singapore’s unforgiving heat.

The first sip instantly brought me back to childhood 7-Eleven Slurpee runs, except this feels like the grown-up version, jazzed up with elderflower and ginger. It’s icy, nicely tart, and that drink you want on a humid afternoon when the heat is doing the absolute most.

More than just a thirst-quencher, it works brilliantly as a palate cleaner between slices of pizza. 

Frankly, I wouldn’t judge anyone — myself included — for wanting to polish off two cups in one sitting. In this weather, it just makes sense.

Last but not least, Twofold’s tiramisu (S$8) was easily the best way to end our meal.

This dessert comes with a distinct hit of Baileys liqueur, giving it a bold, pleasantly boozy character that we absolutely loved. 

Topped with cocoa soil, it also brings an added layer of texture that keeps each bite interesting. For anyone who finds tiramisu a little too soft, the extra crunch makes all the difference.

Am I surprised that Twofold Pizza is this good? Not really. After all, it comes from the experienced team behind Micro Bakery Kitchen.
