We try reindeer meat: Bedrock Bar & Grill is serving Santa’s chauffeurs for a limited time

We’re all familiar with the Christmas carol about the world’s most famous reindeer — it’s something that we’ve all heard since our childhood.
If you need a recap, the chorus goes something like this: “Rudolph the Red-Nosed Reindeer, you’ll go down in my tummy.”
Wait, it doesn’t? Oh, that’s our mistake — we’d confused it with our memory of a recent dinner at Bedrock Bar & Grill, where we were fed a rather peculiar protein.
You probably already guessed it: It was a reindeer meat feast!
Bedrock Bar & Grill World Meat Series 2025
The idea of reindeer meat might sound outlandish to some, but it’s actually a traditional delicacy in the Scandinavian region, which comprises countries such as Sweden and Finland.
This reindeer feast is actually a special limited-time treat brought in by Bedrock Bar & Grill for its World Meat Series, where the steakhouse brings in and builds a menu around special types of meat.

In the past, they’ve featured unique meats such as Mangalica pork (a Hungarian breed of pig known for its high fat content).
For the first edition of the World Meat Series in 2025, Bedrock Bar & Grill has decided to spotlight reindeer meat, in collaboration with Lapin Liha, a Finnish game-meat producer.
Those curious about the taste of reindeer meat have the opportunity to taste it for themselves from now to Apr 30, at both lunch and dinner.
Those looking to share can grab an item from the a la carte menu, which includes the reindeer striploin (S$98 for 200g) and braised reindeer shank (S$78 for 380g).
If you want something a bit more elaborate, though, go for the Treasure of the Arctic five-course wine pairing dinner (S$148 per person), which serves up four different reindeer dishes and a dessert, with wine to pair, too!

Reindeer carpaccio

What is it? It’s a combination of candied walnut, blue cheese, pickled shallots, and rocket cress, paired with reindeer meat done carpaccio style (thinly sliced meat appetiser, usually served raw).
What does it taste like? By itself, the carpaccio is thin and soft, tastes slightly gamey and iron-rich, almost like maguro (tuna). Mixing it with the rest of the ingredients, though, adds a bit of nice sweetness and acidity that softens the reindeer’s intrinsic flavours.
Did we like it? This was one of our favourites from the reindeer dishes served by Bedrock Bar & Grill. The textures and flavours were on point and it wasn’t too unapproachable, though someone at the table commented they thought the meat felt a tad slimy.
Smoked reindeer tartare

What is it? A chopped-up amalgamation of smoked reindeer tartare, crispy garlic, quince jam, gooseberry, and micro herb salad.
What does it taste like? Here, the meat is chunky and tender and coated in a tangy quince jam where the fruitiness contrasts against the reindeer itself, while it ends with a wood-tinged burst of smoke.
Did we like it? This might be more palatable for more people, in comparison to the carpaccio, since the meat’s flavours are mostly covered by the quince jam and gooseberry. However, we did notice that the gamey funk might peek through a bit more distinctly in the finish, accentuated by the smoke.
Braised reindeer shank

What is it? This dish can be seen as Bedrock Bar & Grill’s rendition of the classic braised lamb shank, with reindeer as the starring protein instead. It comes with smoked mashed potato and celery salsa.
What does it taste like? As with most braised dishes, the meat is exceedingly tender and falls apart easily, but the sauce is the more interesting part, tasting wonderfully luscious and brimming with vegetable richness.
Did we like it? There’s no doubt that this is the most easily appreciable dish, since the sauce superbly complements the protein and there’s no fear of gameyness at all.
Reindeer striploin

What is it? Reindeer done in the classic striploin steak form, served with glazed baby carrots, celeriac puree, and served with lingonberry sauce.
What does it taste like? We tried the steak in both medium rare and rare doneness. Medium-rare texture is closer to medium beef steak, while rare reindeer (the recommended doneness by the chef) tastes like the most pristine medium-rare beef steak. We’re talking dreamily buttery and succulent, especially near the centre.
Since it’s simplistically done as a steak, the reindeer’s flavour is a bit more apparent, but the sauce also adds the perfect touch of acidity if you’re hoping to neutralise some of it.
Did we like it? It’s a standout amongst Bedrock Bar & Grill’s reindeer dishes, for sure, with its sublime texture, plus the accompanying components work great with the steak itself.
