If you’re on the hunt for a lavish restaurant to celebrate momentous occasions (such as the upcoming Mother’s Day) at, Italian stalwart Prego is — and has been, for years — a popular choice.

Located at Fairmont Singapore — just a stone’s throw away from City Hall MRT — Prego is quite the household name and considered quite the institution. It’s one of the oldest Italian restaurants in Singapore, having opened its doors back in 1986.

Almost four decades on, the culinary team at Prego continues to dish up authentic, delicious Italian classics. The restaurant is prettily spruced up and elevated by elegant shades of emerald green and white — a picture-perfect spot for special-event meals and dates. Mosaic tiles under your feet add a nice pop of colour, too.

So it’s not a surprise that it remains a hotspot for business luncheons and get-togethers amid a cosy, convivial setting.

However, regulars will note that there’s been a change in leadership, with chef Davide Bizzarri taking the helm as head chef in 2024. He picks up the mantle after his predecessor chef Mauro Sanna stepped down from the position.

Chef Davide hails from the city of Pisa, Italy, so it’s natural that Pisan and Tuscan flavours are at the heart of his cooking. 

Having arrived in Singapore at the tender age of 20, he cut his teeth at various restaurants, such as La Nonna Ristorante and the now-shuttered Senso Ristorante & Bar. In 2023, he was appointed chef de cuisine at Table65 at Resorts World Sentosa, which held a Michelin-star before it closed.

Today, he has over 20 years of culinary experience to show for it and considers himself a maestro of Italian cuisine.

At Prego, chef Davide continues to deliver top-notch flavour and quality in every dish. If you haven’t tried his cooking yet, now’s a good time to do so.

The new menu at Prego

Chef Davide’s latest menu is heavily inspired by the warm, nostalgic flavours of his childhood in Italy, something that he hopes to share with the diners at Prego.

First, start with the polpo e fagioli (S$38) — a rustic dish featuring a plump and juicy octopus leg atop a creamy bean stew. 

Prepared with crunchy cannellini beans — a popular ingredient in Tuscan cuisine — and charred octopus, this dish combines the hearty flavours of both the land and sea.

It’s also spiced with marinated piquillo peppers (chilli peppers native to Northern Spain) for a slightly sweet and fiery touch.

For mains, you must try the gigli al pesto toscano (S$38). It’s a gorgeous, green-hued dish that stands out from the moment it arrives at the table. It even spotlights an exquisite flower-shaped pasta, too! 

The housemade pasta is coated in chef Davide’s signature Tuscan-style kale pesto — it’s prepared with Tuscan kale, which carries a sweeter, nuttier flavour compared to other kale varieties. 

It is procured in-house from Fairmont Singapore’s rooftop aquaponics farm, so the kale is really as fresh as it gets!

Another pasta option is the ravioli di granchio allo zafferano (S$48), if you prefer your pasta with a seafood base. 

The dish features fresh ravioli stuffed chubby with luscious crab meat, and served with succulent prawns and zucchini on the side. 

The pasta is also laden with a decadent cream sauce crafted from Sardinian saffron for a bold and heady flavour — it’s the ultimate indulgence!

The risotto pizzaiola (S$36) is great for those who enjoy tangy flavours.

The risotto, cooked al dente, is steeped in a rich tomato and oregano sauce that brims with a sweet tartness. It’s also crowned with silky burrata for an extra layer of creaminess.

Wrap up the meal with a sweet treat, such as the eye-catching Strawberry Planet (S$20), a pink-tinged dessert with swirls of meringue, compressed strawberry bits and crunchy rice puff beneath. It’s then finished with a tangy strawberry sorbet on top. 

The best way to enjoy this dessert is to gently crush the meringue and mix it up with all the other ingredients, so you get a medley of textures and flavours in each bite.

Once you’re done with the dessert, guests will receive a complimentary glass of limoncello, served tableside from a trolley. In Italy, this is enjoyed as a digestif, traditionally served at the end of the meal. 

Chef Davide’s new menu is available a la carte for both lunch and dinner. But if you’d like to sample a bit of everything, there are also course meals starting from S$42 per person during lunch, and S$58 during dinner.
