Black Caramel: Dubai’s viral chocolatier collaborates with Janice Wong on a uniquely Singapore chocolate bar

If you’re a fan of the famed Dubai chocolate bar from Fix Dessert Chocolatier, you might be familiar with its creator: Chef Nouel Catis.

(In case you haven’t heard, you can get your hands on one of his elusive bars at the Fix Dessert Chocolatier pop-up that opened this past week at Changi Airport’s Terminal 1.)

The man himself was in town a few weeks back for a unique project like no other. Enter Black Caramel, a collaboration between chef Nouel and Singapore’s dessert queen Janice Wong.

Launched on Oct 21, this 200g bar (S$32) is no mere dessert. 

In a marriage of our two cultures, the new Black Caramel pairs Singapore’s earthy buah keluak with Nouel’s signature Middle Eastern-inspired pistachio kunafa in a dark-chocolate shell.

A wild, wacky, and proudly Singaporean creation

When asked how he would describe Black Caramel, chef Nouel likens it to “Willy Wonka — wild, wacky, bold, and playful.”

The first bite hits you with bold buah keluak notes — earthy, slightly bitter, and rich — followed by the nutty sweetness and crunch of the pistachio kunafa

This combination is layered, surprising, and somehow deeply satisfying. Each element plays its part: The snap of dark chocolate, the gooey caramel centre, and the buttery crunch of kunafa. 

Together, they come together in a multi-cultural showcase of Singapore’s unique culinary offerings with Dubai’s flair for indulgence.

For chef Janice, Black Caramel is yet another milestone in her mission to grow Singapore’s chocolate identity. 

“This bar represents everything I believe in — breaking boundaries, celebrating heritage, and creating edible art that tells a story,” she said.

Where can you get it your hands on Black Caramel

Black Caramel is available at all Janice Wong outlets in Singapore and online, as well as chef Nouel’s physical and online stores in Dubai.
