Nestled within the storied walls of Chijmes, Broth & Beyond welcomes diners into a world of simmering pots, earthy aromas and an elegant warmth — reimagined with the flavours of Yunnan’s highlands. 

This isn’t your typical communal hotpot. Here, each diner gets their own simmering pot, making this a perfect set-up for solo feasts, or those who prefer dining on their own terms.

The premium ingredients are flown in directly from Yunnan, with some simmered into its rich and all-natural broths. Its clean flavours are meant to soothe, nourish, and satisfy.

The dining space itself is a stylish, modern interpretation of traditional Yunnanese culture, with warm wood accents and touches of Yunnanese artistry, in a contemporary style. 

And for the night owls, Broth & Beyond stays open until 2.30am, with last orders at 2am — making it the perfect late-night supper hotpot spot.

A focus on clean, flavourful broths

Here’s what stands out immediately: The clarity and depth of its soup bases. Light on the palate and free from greasy residue, the broths reflect the brand’s commitment to clean, wholesome eating.

The broths are brewed fresh each morning, from as early as 5am, and prepared without any MSG or preservatives.

The signature golden fungus chicken broth (S$15.90) is simmered with an impressive locally sourced 15kg old hen and 30kg of chicken meat, then enriched with Yunnan golden fungus, mushrooms and dry scallops.

The result is a silky, golden soup with earthy umami and a soft, savoury finish. It is served with lion’s mane and white fungus toppings for extra depth and texture.

For a deeper and bolder flavour, the signature black truffle and eight-mushroom broth (S$15.90) is a must-try. It is served with a variety of mushrooms and a side of black truffle.

This aromatic broth is slow-cooked for eight hours with chicken fat and eight varieties of Yunnan mushrooms, releasing truffle notes and earthiness from the variety of mushrooms.

At Broth & Beyond, you can expect the usual selection of meats, seafood and vegetables, but with a luxe touch – as you might expect, many of the ingredients are a little more pricey than most hotpot joints around town, but the superior quality is clear in every mouthful.

The pork and beef platter (S$36.99) is a delicious, expertly sliced meat selection with succulent pork belly, tender pork collar and slices of beef tongue — each cut designed for a quick dip and satisfying bite.

Seafood lovers can indulge in the generously portioned seafood platter (S$43.99) featuring succulent abalone, huge tiger prawns, half shell scallops, mussels, and silky grouper slices — all fresh and presented artfully.

The signature Jasmine flower shrimp pate (S$18.99), a handcrafted paste, is a fusion of Singaporean seafood and Yunnan’s florals. It has a delicate jasmine aroma and a springy bite.

If you love mushrooms, the Yunnan delicacy mushroom platter (S$28.99) is a celebration of the region’s wild fungi, with wine cap mushrooms, chanterelles, and golden fungus offering a chewy, woodsy element to the broths.

One side dish deserves special mention: The fragrant fermented beancurd chicken wings (S$13.99). It is marinated in Yunnan spices and fermented beancurd, then coated with batter and deep-fried to golden perfection. It is aromatic, crispy and juicy — an irresistible snack.

Diners can also access the buffet market table — an eye-capturing, self-serve spread of more than 50 sauces, appetisers, appetisers and more — with a top-up of S$4.99.

It also includes fruits and even a build-your-own-jelly corner with a multitude of toppings (including some adorable marshmallows) — a fun, yummy way to conclude your hotpot meal.

Set lunches and promotions

From May 12 to 15, as part of its grand opening promotion, diners can enjoy 50% off all items, excluding soup bases and set lunches.

The flavour discovery set menu lunch, available daily from 11.30am to 5pm, starts at S$29.90. Each set comes with your chosen broth, a side of rice or noodles, a drink, a deluxe veggie platter and full access to the market table.
